I managed to get to a nice, relaxing candlelight yoga class this evening...then home to make dinner. Tonight's dinner...avocado panini and on hand soup...at least inspired by those recipes.
On hand soup
Cut up some onion & garlic, put in a pot with some olive oil and make them sweat
Add vegetable stock
Cut up one carrot and add to the pot
Add more stock and bring to a boil
Add noodles (I had rotini)
Add some spinach (fresh), peas (frozen), chick peas (canned)
Spices - black pepper, cayenne pepper, cumin, fresh dill, fresh cilantro
I just let it simmer for about 15 minutes, no idea about portions, just know it was tasty
Avocado panini
2 pieces wheat bread
1/2 avocado (mashed)
few slices tomato
2 slices meltable vegan mozzarella cheese
olive oil
cilantro
left over chicken seitan
Put one slice of cheese on the bread, add avocado, tomatoes, seitan, cilantro, avocado, cheese, bread. Place in a heated pan that has some olive oil in it (and drizzle a little on the bread) cook one side and flip (adding a bit more olive oil before flipping). It takes about 3 minutes per side or so.
Yummy dinner on a cold snowy night...the bf had the above but the seitan on the side, and onion instead of tomato.
So yes, I needed to write a new entry to provide new recipes.
